Gogi Berry Almond Butter Granola Bars
Better-for-you granola bars for the perfect anytime snack.
Servings: 12 bars
Ingredients
- 1 1/2 cups rolled oats
- 1/2 cups shredded coconut
- 1/4 cups chopped walnuts
- 3/4 cups chopped almods
- 1/3 cups gogi berries
- 1 pinch salt
- 1/3 cup almond butter
- 1/3 cup coconut oil, melted
- 1/3 cup honey
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl combine oats, coconut, walnuts, almonds, gogi berries and salt. Mix to combine.
- In a small bowl, combine the remaining ingredients and mix.
- Pour the liquid mixture into the dry and mix until evenly combined.
- Line a medium baking sheet with parchment paper. Pour the oat mixture over the sheet pan and press to firmly pack together until about 1/4 inch thick.
- Bake for about 20 minutes.
- Remove from the oven and let cool. Once cool, slice into bars.
